Despite the bad rap it gets, our bodies actually need some cholesterol. It helps in the production of some hormones and Vitamin D. But as our bodies produce all the cholesterol we need, the foods we eat often contribute to elevated levels of this waxy substance in our blood. High cholesterol levels can cause a build up in the arteries, creating the plaques that cause heart disease.
