A good breakfast is the key to a healthy, snacking free day and we know this. But munching on oats or poached eggs can get a little dull if you do it everyday. Here is a sugar free pancake recipe for the days when you want to mix things up a bit.
When the weekend rolls around, you want to take your time over breakfast and luxuriate a little with something delicious. When you are counting calories however, or on a diet programme it’s not as much fun as it used to be. That’s why you need a few harmless treats for a breakfast that’s fun but not too naughty. These sugar free pancakes fit the bill nicely. The ingredients are easy to find and inexpensive too, you will need the following:
½ cup rolled oats
½ tsp. baking powder
½ tsp. cinnamon
½ medium banana, sliced
2 egg whites
¼ cup plain Greek yogurt
1-2 Tbsp. almond milk
½ tsp. vanilla extract
You don’t need to spend all morning making it either. Simpley preheat a pan over medium heat and coat it with cooking spray or oil. Make sure it’s very hot before you start pouring on the mixture to avoid that first, disastrous pancake. Add all the ingredients to a blender in the order listed and blend until the oats are broken down and batter is frothy in consistency.
Using a ladle or ¼ cup measuring cup, drop the batter onto the pan to get the size you want, the recipe should yield around 6 pancakes. Cook for about a minute, until the edges start to pop up a little. Using a spatula, flip and cook about 2 more minutes on the other side. Repeat with remaining batter, making sure to coat your pan again with oil between each batch. Now you are free to serve and enjoy. Who would have thought breakfast could be so good – and without the sugar!
